My oldest daughter especially “demands” this cake at every birthday – we had to ship it to her across the country every year while she was in college. On her 18th birthday wanted to get her a nice birthday layered cake for her party at our house with all her friends, and she said all she wanted was two of these cakes. Some of her friends were not as enthused about the cake as she was as it was not a traditional layered birthday cake, and she was deeply offended!! We laughed so hard.
Chocolate Cinnamon Cake
Preheat oven to 400 degrees.
Mix together in a bowl:
- 1 tsp salt
- 2 cups sugar
- 2 cups flour
In a separate bowl add:
- 1 cube butter
- 1 cup water
- 4 heaping tablespoons of cocoa powder
- ½ cup Crisco
And microwave for approx. 4 minutes on high or until melted together.
Pour over sugar, flour and salt mixture.
Now add to that:
- ½ cup buttermilk
- 1 tsp vanilla
- 1 tsp baking soda
- 2 tsp cinnamon
And mix well by hand.
Grease and flour a jelly roll pan and pour mixture into the pan.
Bake the cake for 15-20 minutes – check with a toothpick in center of the cake to decide when done – the toothpick should come out clean when the cake is baked all the way through. Be careful not to overcook.
In a clean microwave safe bowl add:
- 1 cube butter
- 4 heaping tablespoons cocoa powder
- 6 tablespoons milk
Microwave at 70% for 2 1/2 to 3 1/2 minutes til melted – do not allow mixture to boil.
Add to that:
- 1 lb box of powdered sugar
- 1 teaspoon vanilla
- 1 cup nuts (optional)
Stir by hand and pour on the cake at a steady pace to let the frosting even out.
Hint: Prepare the frosting just before taking the cake out of the oven and pour over the cake while it is warm. The frosting will set more evenly.
